After a Slip

Mashed Potatoes on a Low-Carb Diet - Almost!

Low Carb Pumpkin Pie

Don't be put off by the idea of tofu, it tastes absolutely nothing like tofu when mixed with the regular pumpkin pie ingredients below. Tofu simply takes on the flavor of anything you put with it. You may have to go with the higher amounts of the spices depending on personal taste. Note that the full flavors do not really develop fully until a day after it's baked. As a bonus, this pie is very low in both calories and carbs. It's even diabetic friendly.

According to a new study published online at from Primary Health Care Research & Development, many patients when first diagnosed with type 2 diabetes felt "in the dark" as to what to do next in regard to their eating habits. The research indicated that while waiting for a referral to attend a diabetes education program, patients had no idea about what to eat. Even exercise, which would be so easy to suggest is neglected.
