Moroccan Pork 'Stew' with Mango and Spice

Try this delicious, easy-to-make Moroccan pork stew with an international flavor! From CalMWM Executive Chef Jeff Huff.

  • 1 Pound Boneless Pork Tenderloin, cubed
  • 1 large Onion, cut in large chunks
  • ¼ bunch Cilantro, chop coarsely
  • Water as needed to form a paste
  • 2 teaspoons Chipotle in Adobo Sauce
  • Cooking Oil Spray as needed
  • 2 Tablespoons ground Turmeric
  • 1 Tablespoon ground Coriander
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic Powder
  • 1 teaspoon dried Thyme
  • ¼ teaspoon Cayenne Pepper
  1. In a blender, combine the last six ingredients. Then remove about two tablespoons of the spice mix and add just enough water to form a paste. Rub the mixture over pork and let stand 5 to 10 minutes (or overnight) to marinate.
  2. Preheat a non-stick pan over medium-high heat for a minute or so. Spray pan with vegetable cooking oil spray, add the pork (arranged to fit the bottom of the pot) and cook for 1-2 minutes on each side until golden. Remove and repeat with remaining pork (don't overcrowd the pan).
  3. Reduce to low heat. Add pork with marinade, spice mixture, chopped cilantro and cover with a lid and simmer for about 10 minutes (until the meat is tender.)
  4. When it's ready, remove the pan from the heat and add in mango chunks and lime zest, stirring carefully. Serve with cauliflower 'rice'.
