Ingredients
- 1 Pound Boneless Pork Tenderloin, cubed
- 1 large Onion, cut in large chunks
- ¼ bunch Cilantro, chop coarsely
- Water as needed to form a paste
- 2 teaspoons Chipotle in Adobo Sauce
- Cooking Oil Spray as needed
- 2 Tablespoons ground Turmeric
- 1 Tablespoon ground Coriander
- 2 teaspoons Paprika
- 2 teaspoons Garlic Powder
- 1 teaspoon dried Thyme
- ¼ teaspoon Cayenne Pepper
Directions
- In a blender, combine the last six ingredients. Then remove about two tablespoons of the spice mix and add just enough water to form a paste. Rub the mixture over pork and let stand 5 to 10 minutes (or overnight) to marinate.
- Preheat a non-stick pan over medium-high heat for a minute or so. Spray pan with vegetable cooking oil spray, add the pork (arranged to fit the bottom of the pot) and cook for 1-2 minutes on each side until golden. Remove and repeat with remaining pork (don't overcrowd the pan).
- Reduce to low heat. Add pork with marinade, spice mixture, chopped cilantro and cover with a lid and simmer for about 10 minutes (until the meat is tender.)
- When it's ready, remove the pan from the heat and add in mango chunks and lime zest, stirring carefully. Serve with cauliflower 'rice'.
