Low Carb Pumpkin Pie

Don't be put off by the idea of tofu, it tastes absolutely nothing like tofu when mixed with the regular pumpkin pie ingredients below. Tofu simply takes on the flavor of anything you put with it. You may have to go with the higher amounts of the spices depending on personal taste. Note that the full flavors do not really develop fully until a day after it's baked. As a bonus, this pie is very low in both calories and carbs. It's even diabetic friendly.
