Elaine's Quick and Easy Beef Stroganoff

To celebrate our recent milestone on Facebook, California Medical Weight Management shares our premium recipe for delicious, low-calorie beef stroganoff by CMWM Head Nutritionist Elaine Murphy (BA, CNC).

This is actually a very quick and easy recipe to prepare. The beef can be simmering away in a slow cooker while you sleep. Final preparation only takes a few minutes after that. This is delicious when served with cauliflower mashers or cauliflower rice.

Beef Stroganoff

Preparation time: 10 minutes; cooking time: 8 hours.

  • 1 pound lean beef chuck
  • 1 cup jumbo yellow onion, sliced
  • 2 cups mushrooms, sliced
  • 2 tablespoons non-fat sour cream
  • 2 tablespoons non-fat plain yogurt
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon beef broth*

*Use Better than Bouillon brand bouillon if available, or your favorite chicken broth, no MSG.

  1. Cut the beef into roughly 4 equal sized pieces.
  2. Spray a non-stick pan with cooking spray and brown the beef thoroughly.
  3. Bring about 1 quart of water up to a simmer in a slow cooker/crock pot.
  4. Add the bouillon to the simmering water to dissolve.
  5. Add the beef to the crock pot, cover and cook on low for about 8 hours.
  6. Sauté the chopped onion with the sliced mushrooms.
  7. Shred the beef, then add it to the onion and mushrooms and simmer.
  8. Season to taste with S&P and Worcestershire sauce.
  9. Stir in the sour cream and yogurt.

Serves 4. Calories per serving: 204.
