This is actually a very quick and easy recipe to prepare. The beef can be simmering away in a slow cooker while you sleep. Final preparation only takes a few minutes after that. This is delicious when served with cauliflower mashers or cauliflower rice.
Beef Stroganoff
Preparation time: 10 minutes; cooking time: 8 hours.
Ingredients
- 1 pound lean beef chuck
- 1 cup jumbo yellow onion, sliced
- 2 cups mushrooms, sliced
- 2 tablespoons non-fat sour cream
- 2 tablespoons non-fat plain yogurt
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon beef broth*
*Use Better than Bouillon brand bouillon if available, or your favorite chicken broth, no MSG.
Directions
- Cut the beef into roughly 4 equal sized pieces.
- Spray a non-stick pan with cooking spray and brown the beef thoroughly.
- Bring about 1 quart of water up to a simmer in a slow cooker/crock pot.
- Add the bouillon to the simmering water to dissolve.
- Add the beef to the crock pot, cover and cook on low for about 8 hours.
- Sauté the chopped onion with the sliced mushrooms.
- Shred the beef, then add it to the onion and mushrooms and simmer.
- Season to taste with S&P and Worcestershire sauce.
- Stir in the sour cream and yogurt.
