Scrap Frugality

Like many a budding Bay Area cook, I once went through a serious "Chez Panisse Vegetables" phase. I cooked through that book high and low, discovering the thrill of roasted beets and the wonders of fava beans. I remember the cheery suggestion from the Swiss chard chapter: "The crisp-textured stems are delicious steamed, stewed or gratineed." That sounded intriguing. Anything is delicious gratineed, after all. But so many bunches of Swiss chard later, I have to say that the majority of those stems have gone into my compost bin. They take longer to cook than the leaves, which is why most cooks usually toss them.

On Tuesday, 17 December 2013 I wrote a blog about calories called "So This is What 100 Calories Look Like" where I posted images of foods that total 100 calories for each food item in order to give a solid visual of common food and how they measure up calorie-wise to help us all make wise choices when putting our daily menus together. Today I thought I'd match that up with some basic exercise routines that burn 100 calories. Armed with the knowledge of what we consume, we now can put that together with how we can work that off.

Custom Flavored Vinegars
To continue with our discussion on expanding our boundaries with flavors, making your own custom flavored vinegars can offer an endless array of flavors for your culinary palette. What are flavored vinegars? Basically taking your vinegar of choice and adding something unique to it. Once you infuse your creation, let it sit at least overnight to gain the added flavors and colors. The longer it sits, the more the flavors and colors you'll get. For an added flavor kick, when preparing a meal, pour some vinegar in a pan and reduce it just until it thickens slightly and serve the reduced vinegar as a sauce!

It's time to eat but when you open your refrigerator or cupboard doors hoping something 'interesting for a change' will just jump right out and grab your attention. Well if that doesn't happen maybe it's time for a little change, time to shake things up a bit.

Season It!

One of the most frequently asked advice I have is for seasoning foods. This goes for vegetables as well as varieties of meats, seafood and poultry dishes. As a professional chef I have a seemingly endless supply of things to choose from at hand in any commercial kitchen I work from. Even at home it seems that most of my refrigerator and cupboard real estate is taken up with every imaginable condiment, spice, spread, flavored oils and flavored vinegars and on and on. OK, I'm obsessed.

Planning for Holidays and Special Days

When I plan menus I tend to think of things like what is seasonally available and what is at its peak ripeness. I'll couple that with what occasions are being celebrated and compose from there. On Presidents Day I may think of making something to do with cherries (President Washington chopping Dow the cherry tree...) or something Irish on St. Patrick's Day, etc. as I would suspect anyone does. But, for those on the CMWM diet program, that can sometimes be a challenge as we need to stay within plan if we wish to reach and maintain our goals in health and weight management.
