Breakfast for Dinner

BAKED EGG CUPS WITH RAINBOW CHARD AND TOMATOES

When our kids were little we'd occasionally have what we called 'weird food night' which would typically be interpreted as having breakfast for dinner (by popular request). Now they have grown up and moved on my wife and I like to re-visit that comfy practice. When the kids were small, a dinner breakfast would more often then not, include scrambled eggs and such. Now that it's just the two of us we'll still have eggs for dinner but now we enjoy a more 'grown up' version. Below is one such recipe that we enjoy. It's quick, easy and can easily be prepared in advance for  those nights when time is short and when comfort food is called for. If making this in advance simply follow the recipe, refrigerate covered with clear wrap but leave the egg out. Then when you are ready for dinner just remove the prepared cups from the fridge to take the chill off while pre-heating the oven. Crack an egg into each prepared cup and bake! Easy, quick and delicious. The added bonus is only having a cup and a fork to wash when done!
