How Much Turkey for How Many Guests?

Typically count on about 1 pound to 1 ½ pounds of full bone in turkey per guest to allow for a bountiful meal with enough for leftovers to send along with your guests. No, each guest won't eat a full pound or more of turkey nor will a turkey shrink dramatically. But, a large amount of the weight consists of bone, skin, neck and other not eaten parts of the bird (meat that is not scraped clean from the bone and fat). Yes, there is some shrinkage but not enough to skew your calculations.

Thanksgiving Strategy

Thanksgiving Day shouldn't be a day we deprive ourselves. It's unrealistic to think of trying to "diet" on that day. But I'm not saying to go crazy either with excessive amounts of foods just because it may be expected. And you certainly don't want to backslide with any progress you have previously made.

Low Carb Pumpkin Pie

Don't be put off by the idea of tofu, it tastes absolutely nothing like tofu when mixed with the regular pumpkin pie ingredients below. Tofu simply takes on the flavor of anything you put with it. You may have to go with the higher amounts of the spices depending on personal taste. Note that the full flavors do not really develop fully until a day after it's baked. As a bonus, this pie is very low in both calories and carbs. It's even diabetic friendly.
