What's Fresh This Winter?

Fresh produce selections in the winter months can sometimes seem pretty bleak and costly. But there really is plenty to choose from if you just know where to look. Did you know that the frozen food section of your grocery store is a great source for fresh produce? Yes, fresh in the frozen section! This is something that the local food sales rep. knows very well and helps to keep the quality level high in our favorite restaurant menus and can be taken advantage of in your own home. Something good to know is that food that is harvested, destined for your grocer's freezer is picked at the peak of ripeness, blanched and quick frozen prior to packaging. As a result, the frozen food is often times more 'fresh' and of a higher quality than frozen. Several advantages that are available with frozen produce are the highest level of ripeness at harvest, short cook times prior to freezing and packaging ensure the brightest colors and flavors as well as preserving the nutrient levels far better than further processed foods. Additionally, another advantage of frozen produce is that there is virtually no price fluctuation year round. Each year when the largest producers of frozen foods make their deals with farmers they secure solid pricing that hold for the entire season and 'futures' deals further ensure price stability regardless of the weather in the winter months.

Comfort Foods To Boost Weight Loss

With the exception of New Years Eve celebrations we are nearly through with the temptations of holiday, festive dining. However, it is still winter and nourishing comfort foods will be on our menus for some time to come. They're called "comfort" foods for a reason - they bring back warm memories, tickle your taste buds, and soothe your soul. Though some comfort foods are deep-fried, covered in cheese, or packed with sugar, some can actually help you lose weight. Beat the battle of the bulge with some cozy selections.

Last Minute Food Gifts

The count down to Christmas is now nearly complete and there are still those last minute gifts that are needed to finish off your list but traffic is backed up, the stores are crazy busy, what can one do? Well, some of my favorite gifts to receive are hand made food type presents. Sure, chocolate truffles, nut brittles and such are a decadent delight. But some of the most satisfying are of the more nutritious variety. Some of those are what I will focus on for today as our shopping for the holidays is coming to a close. Simply put these suggestions in a Mason Jar, tie with a ribbon and a bow and you are all set to go!

Cold Weather Favorite Comfort Food

This time of year is the time for hearty soups, stews, slow cooker dishes and casseroles that warm the bones and comfort the soul. The traditional Shepherd's Pie is just such a meal and is so easy to make. With this version we'll prepare this dish with our CMWM program in mind although the rest of the family or friends will enjoy this just as much. The typical Shepherd's Pie generally calls for ground beef or lamb made into a thick savory stew/casserole topped with mashed potatoes and baked until golden brown. We'll substitute lean ground turkey breast for the meat and use our own Cauliflower Mashers recipe (which can be found on the website).

Glazed Ham

The average bone-in or boneless ham typically weighs about 10-12 pounds which can serve about 40, 4 ounce servings. This glaze is sufficient for one whole ham. You can scale down the recipe if you are serving a smaller portion of ham.

Turkey Day Q&A

How Much Turkey for How Many Guests?

Typically count on about 1 pound to 1 ½ pounds of full bone in turkey per guest to allow for a bountiful meal with enough for leftovers to send along with your guests. No, each guest won't eat a full pound or more of turkey nor will a turkey shrink dramatically. But, a large amount of the weight consists of bone, skin, neck and other not eaten parts of the bird (meat that is not scraped clean from the bone and fat). Yes, there is some shrinkage but not enough to skew your calculations.
